Her welcome alone would have been worth writing about.
When her colleague took over to guide us through the evening, the standard did not drop for a second. Our server was knowledgeable, attentive without being intrusive, and clearly passionate about the food and wine on offer. But nothing quite prepared me for the discovery that the cellar holds a bottle of Pétrus Pomerol — the 2021 Grand Vin. Finding one of Bordeaux’s most revered wines on a wine list in Split is the kind of pleasant surprise that transforms a very good dining experience into an unforgettable one. It speaks to the ambition of this hotel’s food and beverage programme — the signal that Hotel Ambasador is not merely competing with its Dalmatian peers, but positioning itself alongside the finest hotel dining rooms in Europe.
